Cooking again - What're you bringing to the Superbowl Party

I'll start:

Artichoke Dip

Ingredients: • 1 can cream/celery soup
• 1 cup grated Parmesan cheese
• 2 (6.5 ounce) jars marinated artichoke hearts, drained
• 2 cups shredded mozzarella cheese
• 1 1/2 teaspoons garlic powder
• 1 teaspoon paprika

Directions: 1. Preheat oven to 350 degrees F (175 degrees C).
2. In a large bowl, thoroughly mix the mayonnaise, Parmesan, artichoke, mozzarella and garlic powder. Transfer the mixture to an 8×8 inch baking dish.
3. Bake 30 minutes, or until the surface is lightly browned and bubbly.
4. Sprinkle with paprika and serve warm.

This is my new thing, last party I took it to they ate it up. I prefer making it ahead of time so salad juice permeates throughout.

For the olive salad:
1 gallon large pimento stuffed green olives, slightly crushed and well drained
1 quart jar pickled cauliflower, drained and sliced
2 small jars capers, drained
1 whole stalk celery, sliced diagonally
4 large carrots, peeled and thinly sliced diagonally
1 small jar celery seeds
1 small jar oregano
1 large head fresh garlic, peeled and minced
1 teaspoon freshly ground black pepper
1 jar pepperoncini, drained (small salad peppers) left whole
1 pound large Greek black olives
1 jar cocktail onions, drained
Combine all ingredients in a large bowl or pot and mix well. Place in a large jar and cover with 1/2 olive oil and 1/2 Crisco oil. Store tightly covered in refrigerator. Allow to marinate for at least 24 hours before using.

For the sandwich:
1 round loaf italian bread
1/4 pound mortadella, thinly sliced
1/4 pound ham, thinly sliced
1/4 pound hard Genoa salami, thinly sliced
1/4 pound Mozzarella cheese, sliced
1/4 pound Provolone cheese,sliced
1 cup olive salad with oil

Split a muffuletta loaf or a loaf of Italian bread horizontally. Spread each half with equal parts of olive salad and oil. Place meats and cheeses evenly on bottom half and cover with top half of bread. Cut in quarters. Enjoy!

I keep it simple with my cheese dip.

I melt a couple boxes of Velveta in a crock pot and once it's melted I throw in a few jalapeno peppers, a few banana peppers, red and green pepper, onion, and some meat (last year it was venison). It's best served hot but ok cold.

oh yeah I forgot to add that I brown the meat before putting it in the dip.

Jalapeno Popper Spread

2 packages of cream cheese
1 cup mayo
1 can diced green chiles (4 oz. - drained)

Mix.

Put in dish, sprinkle a little parmesan cheese... throw in oven until warm.

Eat with tortilla chips, etc. It is phenomenal.

You can add some jalapenos also... or use some of the chile juice to give it more of a flavor. All depends on what you like.

Buffalo Chicken Dip
8 oz. pkg. cream cheese, softened
1/2 cup blue cheese or ranch salad dressing
1/2 cup Franks Red Hot
1/2 cup crumbled blue cheese (optional)
2 cans white chicken breast, drained

Combine ingredients, then
Bake at 350 for 20min
or
Microwave for 5min
or
crockpot for 90 minutes on high 2.5-3 Hrs on low

Sadly no parties to go to, but I made it a ritual back in HS to buy a Little Caesars pizza, 2 liter, and some bread sticks.

The only exception was the year I lived in Houston when it was hosted there. Went to my girlfriends aunts house who lived 4-5 blocks from the stadium, she made real texas bbq (all day smoked) and the city was on fire that day. Remember listening to the radio and hearing about all of the random celebrities who came in for the game and were chilling at local bars. What a day lol. Her aunts btw, sold Mrs. Jackson that dress, which I heard was heavily modified from it's stock version lol.

lil' smokies rolled in strips of puff pastry (standard package available in grocery freezer section), baked and served with ketchup and spicy mustard as dips... (great for kids of all ages but the young ones really go for this)

I have a variation of billy's artichoke dip which I serve with wheat thins...

Hormel chili w/o beans and a block of cream cheese heated up in the microwave and served with large dipping Fritos... (I know some people do this with Velveta cheese, but I like the taste of the cream cheese...)

this year, we also have a deer stick (like a beef stick - from the deer Sam got) served with a brown mustard with seeds in it, cheese slices and crackers.

and, like Hank, my own secret recipe of chili, or since I'm working with puff pastry, Italian sub fixings and cheese rolled up in the pastry, baked and then sliced into sections...

dessert: thin ginger snaps and white frosting made into small sandwiches and white chocolate chunk macadamia nut cookies

Bacon wrapped water chestnuts

#1 bacon
3 cans of whole water chestnuts
1 bottle of soy sauce
¼ cup of brown sugar
Tooth picks

Take the pound of bacon and cut into three equal sections.

Wrap each water chestnut with the bacon and secure with the tooth pick through the center.

Put all the bacon wrapped chestnuts into a shallow dish and pour the soy sauce over them so at least 1/3 of their bottoms are soaking in the sauce. Let them sit for 2-4 hours (any more and they may be too salty).
Place the bacon wrapped chestnuts on a cookie sheet and sprinkle them with brown sugar. Bake at 350 till the bacon get’s crispy.
