I have a couple Microsoft Outlook questions

Ive got a couple questions about using Outlook:

#1 - How can I put a URL in an email, but not have the URL itself show in the message, but instead, just have a phrase highlited that you could click on? Example - if Im explaining a concept to someone and I want to say 'According to John Smith'... And have it set so my recipient can click on john smith and it will take him to wiki or some site that gives John Smith's bio...

What my usage is, is I need to send out a message where I'll need to use a couple latin legal terms and I'd like my audience to just be able to click on the term and have it's definition come up - those that dont need this info dont need to be distracted by the URL... Any ideas?

#2 - is there a function list anywhere on line that lists how to utilize all the cool little "special symbols" that Outlook has avaialble? Examples being the 'Cents' sign, the degree sign, fractions, heck - smiley faces, all sorts of things are available and I used to know how to get to a few of them, but have long since forgotten, and all I know is there are a TON of them out there, but I wouldnt know where to go hunt for them.

Any help would be appreciated.
